Healthy Recipes on a Budget
Healthy eating doesn't have to stop when your budget goes on a diet. There are plenty of delicious recipes using less expensive cuts of meat, or even beans as sources of protein.
Here are some selections that are easy on the wallet — and the waistline.
Asian Oven Omelet
A great source of low-cost protein, eggs are an ideal way to liven up any meal on a budget. If you enjoy egg foo yong, you're sure to like this Asian Oven Omelet recipe.
Sausage Lentil Stew
This hearty Sausage Lentil Stew is chock-full of protein-packed lentils, vegetables and tasty turkey kielbasa. It's big on flavor but easy on the budget.
Easy Barbecued Pork Chops
This is my favorite "penny pincher" skillet supper. Sweet red peppers add color and flavor to these Easy Barbecued Pork Chops, but when I'm watching our budget, I use less expensive green peppers.
Flounder Florentine
I discovered this recipe for Flounder Florentine several years ago when I was looking for a way to dress up fish fillets. Even though we're not big fans of fish, we enjoy this dish. It's healthy, tasty and economical.
Turkey Noodle Soup
My husband must eat a very low-fat diet, so I'm always experimenting to find things that will agree with his stomach, too. This easy, economical Turkey Noodle Soup makes two generous servings. Sometimes I substitute chicken, or a different pasta or vegetable.
Spaghetti with Sausage and Peppers
Smoked turkey sausage is a wonderful change of pace from traditional Italian sausage and ground beef sausage. And with fresh peppers and onion, this recipe for Spaghetti with Sausage and Peppers is not only quick, but economical.
Tomato Garden Pasta
I mix fresh tomatoes, green beans and pasta with a splash of balsamic vinaigrette, a hint of basil and chives and crumbled feta cheese for a colorful, Mediterranean delight. I have served this Tomato Garden Pasta many times, using fresh tomatoes from my garden. It's a wonderful side dish. With Italian sausage and basil bread, it's a scrumptious meal.
Curry Citrus Chicken
I found the recipe for this delicious Curry Citrus Chicken in a pamphlet of microwave recipes many years ago. My husband and I prefer dark meat, so we like it made with chicken thighs. But you can use boneless chicken breasts if you prefer.
Swiss Steak
Here's a dinner that takes up very little time. We like to serve this Swiss Steak with mashed potatoes, rice or noodles. Add a green salad and supper is set.
Hot 'n' Spicy Flank Steak
I received this Hot 'n' Spicy Flank Steak recipe from a friend, and it's been a family favorite ever since.
